The COPPER bottom of the vessel makes the vessel low heat capacity as copper has low specific heat capacity and it absorbs the heat QUICKLY so it is EASY to cook in itand wood is a NON conductor of heat MEANS it has high specific heat capacity which helps in holding the hot vessel as it doesn't gain the heat quickly
