Sucrose is a disaccharide made up of two monosaccharides that is glucose and fructose. Glucose is a hexose sugar that is to say that it has six carbon atoms in its structure and fructose is a pentose sugar having five carbon atoms in its structure. These two STRUCTURES combine in  a reaction KNOWN as condensation since it involves loss of water molecule.

So to DETERMINE anomeric carbon atom is sucrose, you need to determine the carbon atom with hydroxyl  group in the equatorial position. This is the preferred structure since its more STABLE.
