And the nitrogen is a non reactive gas which does not.. react with oxygen to prevent them from becoming rancid , when oil and fat containing food items comes in contact with moist air they become rancid which leads to bad taste, change in colour of food items. bcoz nitrogen does not react easily with oxygen and prevents rancidity |
