Steaming - Using a boiling LIQUID to produce steam, which is used to cook the food more gently than boiling. Braising (stewing) - using a small AMOUNT of liquid and sealing the pot or container to raise the pressure. Simmering (also stewing) - cooking in liquid below the boiling POINT.
